The Dragonfruit Dark Chocolate Bundt

In 2011, I baked my first original recipe cake in observance of National Bundt Day. On the afternoon of Saturday 15 Nov 2025, I baked my 15th. By that night, despite the day having started pretty well, it was very clear the weekend would end very badly.
On August 1, our foster dog Winston was adopted. On August 2, our resident senior Min Pin started acting off and not eating. There will be an entire separate post about that. Suffice to say here, from August to mid-November, my life pretty well revolved around caring for her.
My only plan for this recipe was a dragonfruit and a bag of bittersweet chocolate chips on sale when I got groceries that Thursday because “plan” wasn’t really a word that featured heavily in our vocabulary those days. But November 14 was a good day for her, so I woke up on November 15 happy with the idea of baking a cake. On November 16, we said goodbye.
The next 4 months were a blur, in all the worst and best ways. As I type, it’s 31 March 2026. Somewhere in the house is the notepad with this recipe written in it. I’ll update this post if I find it, but you can get very close to what I made here by searching “fruit puree bundt cake” and adding 6 oz of extra-dark/bittersweet chocolate to the fruit as you puree it, then using that same chocolate in a standard chocolate glaze recipe.
Here are some pictures because it was a very pretty cake to make and eat. And I was happy to have a chance to use the other pan my dear friend Chimi surprised me with in 2023 that was still in its original packaging.
This remains the longest creative streak of my life, despite many events seeming to conspire against it continuing. No matter what life throws at us, somehow I can always manage cake.
